The geological conformation of the area requires mostly manual work in the vineyards. In the times of our grandparents or great-grandparents, the only forces at their disposal were their legs and arms, a cart, and, only in recent years, a tractor without a motor. Even today, the work is challenging and exhausting, despite the significant help provided by mechanical equipment. Over the years, many vineyards, especially those in less accessible areas, have had roads and access points built to facilitate the transport of grapes during harvest season and to carry out necessary treatments. Harvest time itself is a special moment that brings people together, evoking memories and ancient traditions. The product obtained from the harvest is distinguished by soft pressing, aimed at primarily extracting only the “free-run must,” or more precisely, the “noble juice,” which is superior in quality. The wine can then be destined for autoclaves, where it undergoes a brief secondary fermentation in these pressurized containers, preserving the varietal aromas to produce sparkling and semi-sparkling wines. Alternatively, it can be presented as a traditional wine, bottled in spring.
